Its owner, Allison Russell, is no stranger to the city’s business community, with 12 years of experience running the successful Taylored Venue & Events and Shabby Allie’s Boutique and Catering.

Russell had long held an interest in the charming building that now houses Le Brique Bistro. “This little place, it’s caught my eye for years,” she shared. “It’s like one of those places that you just drive by and ask, ‘What’s in there now?'” Owning a cafe or bistro had been a long-time dream for Russell, and she finally saw an opportunity to turn that dream into reality.
Originally, Russell had envisioned the building as a coffee or soda shop, but eventually decided that a bistro would be a much more fitting choice. It offered the perfect opportunity to introduce some of the catering items from her venue to a wider audience. “A lot of things that we do at our venue you can’t get out to the public, because it’s just a venue for people to come in and do their events,” Russell explained.
Affordable and Approachable Menu
When crafting the menu for Le Brique Bistro, Russell aimed to create an affordable and approachable array of options that would suit the city’s working community. Frites, salads, build-your-own sandwiches, crepes, wraps, paninis, and even sweet treats such as scones, truffles, and creme brulee are included in the diverse menu. “We’re trying to keep prices reasonable for a lunch where people can come over, grab something fast,” said Russell. “We want it to be a family-friendly place.”
Next Step: Enhancing the Experience
The restaurant officially raised its shutters on April 29th after two months of solid preparation, including menu planning, arranging equipment, and interior painting to align with the restaurant’s overall aesthetic. The response from the community has been positive so far, and Russell is already contemplating ways to enhance the customer experience throughout the summer. “We’ve got some things on the side that we’re going to work on over the summer, as far as some outside stuff for kids and extended hours for concerts and other downtown events,” she revealed. Russell is also hoping to introduce a delivery service by mid-June.
